 Notes:
  • Chilli varieties are sun-dried post-harvest, sometimes smoked depending on variety and demand.
  • Turmeric requires careful curing and drying to preserve curcumin levels and color.
  • Makhana undergoes labor-intensive puffing and roasting post-harvest.
  • Bay Leaf and Cinnamon are wild or semi-wild harvests, handpicked and sun-dried for aroma retention.
